Alpenfire's Pirate's Plank is a bone dry cider made from a blend of certified-organic, estate-grown early bittersharp cider apples, including Kingston Black, Yarlington Mill, Foxwhelp, and Muscadet de Dieppe; Modeled after English dry cider. Five-week native yeast ferment finished with Champagne yeast, five months stainless maturation; four months in oak. Bottle conditioned, unfiltered, and unpasteurized. No sulfites added. Notes of lemon zest, pastry dough, and smoky bacon phenolics. Pairs well with blue cheese or creamy risotto.
